  • 3. I discarded the ripen seeds but some people like to cook the ripen seeds too, it is upto your wish
  • 6. When they are cooled down grind them to a fine powder and keep aside, if using sesame seeds then dry roast them and grind to a fine powder
  • 7. In the same pan add oil and when oil is hot add mustard and cumin seeds
  • 10. I added salt immediately after adding spiny gourd pieces so that they get cooked a bit more quickly
  • 12. It takes for about 15 minutes or so to get cooked nicely, keep stirring in between otherwise the pieces get burnt
  • 13. Now when the pieces are nicely cooked add red chilli powder, coriander powder, sugar and cook for 2 more minutes
  • 14. Now add ground peanut powder and mix nicely, the original and traditional recipe of cooking spiny gourd curry calls for adding sesame seeds powder but since I was in short of sesame seeds I added peanuts powder to cut down the bitterness
  • 15. Now after 2 minutes of cooking switch off the flame and serve spiny gourd curry with steamed rice or rotis.
