Ingredients

  • 1 large Potato - 2 medium Uncooked rice - 1/2 cup Onion - 1 large, sliced
  • 3 tbsp Cumin seeds
  • 1/2 tsp Curry leaves
  • 1. Cook the rice and spread it out to cool
  • 2. In a pan, heat the oil
  • 3. When the cumin seeds splutter, add the sliced onions and chopped green chillies
  • 5. Add the tomatoes and cook till soft
  • 6. When the tomatoes are cooked, add the capsicum and cook for 2 minutes
  • 7. Add all the masala and mix well. Add the potatoes and mix it in.
  • 8. Add the lemon juice and mix well
  • 9. Add the cooked rice and mix well
  • 10. Add the chopped coriander leaves and mix well.
  • 1. I like the capsicum to remain slightly crunchy so I don
  • 2. You can make this with basmati rice too
  • 3. You can add some green peas along with capsicum and potatoes
  • 4. You can use ginger garlic paste and add fresh mint leaves separately
