Last year I have got a lot of BottleGourd (Sorakaya) yield from my Garden. As I got bored with the routine varieties of this winter squash vegetable, today I have twisted this in Bagara Style by using the Spice powder i use for Bagara Baingan Curry and that resulted in Bagara Lauki
Like sabudana ki khichdi, Sabudana Bade, Kheer, Aloo ki vrat kisabzi, Rajgire k aate ki puri. Heat a deep Pan with Ghee (Clarified Butter), Squeeze the water from grated bottlegourd And Saute it in a ghee for few minutes
The answer to such a situation can be – roasting in the oven OR steaming OR of course, roasting using an ‘appe’ pan (ebelskiverpan/’paddu’ pan/’paniyaram’ pan) which will avoid the mess as also the calorie overload
I like to prepare the gravy with a combination of almond and poppy seeds and hence the name, Badami Lauki Kofta (BottleGourd Dumplings in Almond Curry)
