Here is a recipe of quick dish " Brinjal- Capsicum -Tomato curry " which is easy to prepare and I am sure all age group will surely love to have the curry

This capsicumcurry tastes best with puri and chapathi and better with rice and sambar combination. Add onion pieces, curry leaves, ginger garlic paste, tomato pieces and saute
Add in brinjal, chillies and water. So please take sometime to cook down the onions and tomatoes till it is all mushy, so it melts into the curryand give the required thickness
Also in many functions it is cooked and served as North and South Karnataka people love it a lot. You can also add capsicum slices with brinjal , it will also blend nicely
Mix everything well and cook the whole curry until brinjal gets soft and cooked well. In south india it is commonly called as ‘vankaya koora’ and it is a common and basic curry made to be eaten with rice
