When i made this gravy,i was super happy that i got yet another easy,interesting brinjal gravy recipe just like my Ennai kathirikai kuzhambu andbrinjal kara kuzhambu recipes
Coriander powder. Poppy Seeds/Khus Khus. Rather than the simple & normal Brinjal fry or KathirikaiMurungakkai poriyal, I would prefer some more elaborate preparations like Kathirikai Gosthu or Kathirikai Kara Kuzhambu
Back home, i googled for no onion no garlic vanakaya koora aka stuffed brinjal curry, i got hooked to Divya's Masala Gutti vankaya kura as this recipe goes for simple ingredients and they are prepared without both onion and garlic
When brinjals are soft add remaining stuffing masalaand add half cup of water. Gutti Vankaya kura is an authentic Andhra Recipe made with small purple tender brinjal's stuffed and cooked with some spices
Now add the stuffed brinjalsand the remaining ground masala. I came across few simple recipes without grinding part and some with freshly ground masala
The best vegetables to make a kara kuzhambhu is drumstickandbrinjals. Add in the spice powders - red chilli, kashmiri red chilli, cumin/jeeraandcoriander pwoder
Now in the same pan, add in brinjaland saute well. This is my latest invention, oneday i was looking in the fridge early in the morning for some onions and tomatoes to make a chutney
(Check the water level, salt and spicy of Tomato brinjal chutney if you want more means add it). Its a Quick recipe goes well with idly, dosa, white rice and ragi kali also
This dish has multiple versions of the recipe from region to region, This is a quick and easy method of stuffed eggplant / brinjal curry, which is a perfect dish to enjoy with jowar roti’s (jolada rotti) it is a typical north Karnataka style preparation
Also in many functions it is cooked and served as North and South Karnataka people love it a lot. Serve hot hot brinjal curry with roti/ chapati / phulka / rice / akki rotti , it goes well
