Back home, i googled for no onion no garlic vanakaya koora aka stuffedbrinjal curry, i got hooked to Divya's Masala Guttivankaya kura as this recipe goes for simple ingredients and they are prepared without both onion and garlic

Add brinjalsstuffed. Add in the brinjals, and toss well in the oil. Take the brinjal, slit them in the middle,open lightly, stuff the brinjalwith this mix
Slit the bringals /eggplants length wise , on four sides. This recipe is not like any other stuffing recipe as the stuffing is more watery and may sometimes become impossible to stuff , then you can just add in the mixture above fried brinjals and fry until it oozes oil
This dish can be made either with small purple brinjals or with the small round green eggplants. Make sure that the brinjals are absolutely fresh, shiny and tender (seeds shouldn’t be black)

Refer my StuffedBrinjal Recipe which is another variant of the same. If are making a stuffed version of this curry then you can pressure cook it to make it easier
Make sure to keep the flame very low so that the brinjals do not get burnt. There are so many different varieties of stuffedbrinjal and this recipe is a typical Andhra style stuffedbrinjal or Guthi Vankaya inspired from gayatrivantillu
