I choose a traditional bengali dish named Doi Potol (Pointed Gourd in Yogurt/Curd Gravy). Now heat ghee and refined oil together in a wok and fry the potols/parwals till it becomes golden brown in color
Most of them are seedless and have a soft texture which gets tender quickly and if they are overripe then the seeds are taken and stuffed with minced meat or seafood or boiled potatoes to make delicious " Dorma "
