The chutney needs very few basic ingredients and the recipe is very simple. When I saw a picture of this Rajasthani Garlic Chutney on pinterest, I had pinned it to my 'must try out' board, and unlike many dishes that are still waiting on the list, this one got done the very next week itself
And we know our family the best. Curd MUST NOT BE ADDED until serving time. I got this recipe years ago from a chef working in a restaurant in Thrissur
And still if you don't want to invest in another kitchenware then just cut the onion into two halves prick a fork on the back side of onionand grease the cut part on the tava ( pan )
I also make dhaba style aloo gobi curry where cauliflower and potatoes are simmered in spicy oniontomato gravy that goes very well with paratha and chapati
