I used my favorite Chocolate Cake recipe and Blueberry Bavarian cream was adopted from SprinklebakesAll you need is ( Serves 10-12 )For the Chocolate cakeDark Chocolate- 180 gm ( cut into small pieces )Unsalted Butter- 200 gm ( cut into small pieces )Instant coffee powder-1 tbspWater-125 mlAll purpose flour-1 and 1\4 cupsCorn flour-1\4 cupBaking powder- 1 tspBaking soda-1\2 tspGranulated sugar-3\4 cupBrown sugar-1\2 cupCocoa powder-1\3 cupEggs-3Milk-75 mlLemon juice-2 tspFor the soaking syrupwater-1\4 cupSugar-2 tspRum- 2 tbsp ( or 1 tsp vanilla extract )For the Blueberry Bavarian creamBlueberry preserve- 400 gmWater-1\4 cupGelatin- 25 gmWhipping cream-3 cupsFor the chocolate GanacheWhipping cream-1 cupDark chocolate-1 cup ( chopped )Method of preparationFor the cakePre heat the oven to 160 degrees CGrease and line, two 8 inch pansAdd lemon juice in milk and keep asideMix instant coffee in waterMelt butter and chocolate in a panAdd coffee and water to the panRemove from heat, once the butter and chocolate has meltedKeep aside and coolWhisk together all purpose flour, corn flour, baking powder and baking sodaAdd granulated sugar, brown sugar and cocoa powderWhisk egg and milkAdd chocolate mixture and whiskAdd the dry ingredients and fold with a spatulaPour the batter equally in both the panBake for 30-35 minutes, till a tooth pick comes out cleanRemove from the oven and cool in the pan for 5 minutesRemove from the pan and cool on a cooling rackFor the soaking syrupMix all the ingredients in a bowlKeep asideFor the Blueberry Bavarian creamAdd 1\4 cup of water in the Blueberry preserve and heat it till the preserve is dissolvedStrain it and keep aside to coolChill the cream and whip it till stiff peaks formDissolve the gelatin in waterAdd the gelatin in the blueberry preserveMix nicelylet the mixture come to room temperatureAdd the mixture in the whipped cream and fold with a spatulaFor the GanacheHeat the whipping cream till it starts to boilPour it over the dark chocolateWhisk till chocolate is melted and shinyAssemblyKeep one cake inside a 9 inch springform panBrush with half of the soaking syrupPour half of the whipped cream and cover the sides and top of the cakeKeep the other cake on top and brush with the remaining syrupPour the remaining cream and cover the sides and topRefrigerate for at least 2 hoursRun a knife along the cake and open the springform panTake the cake out and keep it on the standPour the Ganache ( room temperature ) on top of the cakeDecorate with chocolate shavings
