  • 1 cup water 6 tbsp butter, room temperature 1 cup sugar 2 eggs 1.5 cup all purpose flour / maida ½ tsp baking soda 2 tsp baking powder 1 tsp vanilla essence Instructions Boil 1 cup dates with 1 cup water till the dates are soft and pulpy about 2 - 3 minutes Blend into a smooth paste. Set aside to cool down completely. Beat together butter and sugar till light and fluffy. Add the eggs and beat till creamy. Add in the dates paste and mix well. Sift together baking powder, baking soda with all purpose flour. Add this flour to the dates batter little by little. Gently fold in with a spatula. Mix in the vanilla essence and the chopped dates. Transfer this batter to a greased cake pan Bake in a preheated oven of 180 C for about 40 to 50 minutes till a toothpick inserted comes out clean. Serve warm over tea or with a glass of milk. 3.5.3208
