tender brinjals

sized onion few curry leaves ¼ tsp turmeric 1 tsp mustard lemon sized tamarind 4 tbsp oil salt to taste Ingredients for masala stuffing: 2 tbsp roasted peanut / groundnut ½ cup dry coconut / kopra (or fresh coconut / desiccated coconut) 2 tsp sesame seeds / til 2 tsp bengal gram / chana dal 1 tsp split glack gram / urad dal 1 tsp coriander seeds / dhania 1 tsp cumin seeds / jeera ¼ tsp fenugreek seeds / methi 6 -12 red chillies- based on spice level 5-6 curry leaves 1 tsp oil Instructions wash and dry the brinjals. cut them in x-shape just half through the brinjals. do not remove stalk. keep immersed in water for about 15 mins to remove the bitterness from the brinjal. discard the water. later dry roast the sesame seeds till they are fragrant - takes 1 minute now fry chana dal, urad dal, coriander seeds, cumin seeds, fenugreek seeds, red chillies and curry leaves in a teaspoon of oil. also dry roast coconut for few seconds till it start to change colour. transfer the roasted masala, sesame seeds and peanuts into a mixer jar. grind it to a fine powder adding turmeric, and combining with the peanuts-sesame-coconut mixture. keep aside. Stuff the masala with a spoon or with your fingers as much as possible into the slitted brinjals. keep the remaining masala powder aside. in a small cooker, take more oil. when they are hot, splutter mustard seeds and curry leaves. add sliced onions and saute till they are translucent. now add the stuffed brinjal and saute for 3-4 minute keep the flame on medium. add salt, tamarind paste and remaining stuffing masala if there is any. arrange the brinjals side by side,add some water and close the cooker lid. cook it for just 1 whistle.this ensures uniform cooking of brinjal, reduces cooking time and also helps in reducing oil usage. once the pressure releases, open the cooker and check for the salt. serve hot stuffed brinjal with chapathi / jowar bhakri / rice bhakri / steamed Rice. this tastes even more delicious the next day. 3.5.3208
