Ammini Kozhukattai - A Vegan riceflour steamed mini dumplings. I had Aval Payasam (rice flakes kheer), Arisi Upma (broken rice savoury pudding) as the other shortlists but was keen to make today's dish as I had not made any Kozhukattai (steamed dumpling) from scratch
Soak rice and grind to a smooth mixture adding as little water as you can. Heat a kadai, add the ground rice to it and keep stirring without forming lumps and till for a solid mass as shown below
Few people use only wheat flour , but i mixed with riceflour to make soft dumplings. Wheat flour 1 cup. Riceflour 1 cup. Take a mixing bowl , add wheat flour , riceflour , spread 1 tsp of salt , red chilly powder and mix well , now add little by little water and mix well to make dough ,as shown in pic. Keep a big cooker pan on stove , add 2 cup of water , keep ready to steam cook dumplings. Keep medium high flame close the cooker pan (DON'T KEEP WHISTLE , JUST PUT A SMALL CUP ) for 8 MIN , turn off the stove , remove the cooked dumplings and add them to kadai in which methi leaves is done , turn on the stove keep low flame , spread 1 tsp of salt ,mix well for 4-5 min then turn off the stove. 1 cup Riceflour 1 cup Salt 2 tsp Red chilly powder 1-2 tsp Fenugreek leaves 1 big bunch (it will be tasty as more as u add). 8 MIN , turn off the stove , remove the cooked dumplings and add them to kadai in which methi leaves is done , turn on the stove keep low flame , spread

Thalipeet recipe that I’m going to narrate here is mostly a southern recipe, shares the same name and almost the same ingredients, except that it’s made out of riceflour instead multi grain flour

In a wide bowl take the riceflour add chilli powder, salt to it and mix well. When urad dal turns golden brown add asafoetida powder, curry leaves followed by the wet flour
However, I found this recipe using riceflour and used it. String hoppers are thin rice noodles that are steamed and can be served with a savory stew or with sugar or jaggery
