An excellent eggcurry with a difference, lots of cilantro and a well prepared fluffy omelette. Its so yummy that, since I have tried this recipe I have never gone back to the original boiled eggcurry

Heat oil in a pan add mustard seeds, red chilly, curry leaves, onion, tomato gravy, add tamarind juice, jaggery, salt, water, mix this and once come to boil add boiled eggs, cook this for few minutes then switch off the flame
