Gajar Ka Halwa or Carrot Pudding (Indian Style )(Without Using Khoya and Condensed Milk )

Ingredients

  • 4 medium carrots-yields approx
  • 2 -2.5 cups grated carrot
  • 1 tablespoons ghee or clarified butter
  • 4 green cardamom pods
  • 2 cups whole milk
  • 3/4 cup sugar
  • 1/4 cup raisins
  • 10 cashew nuts
  • 1/4 cup pistachio
  • 1 tablespoon ghee in a heavy bottomed pan or non -stick . fry the raisins on low heat until they puff up. Remove and keep it aside. In the same pan, fry cashew nuts until golden brown.Remove from pan.Add 1 tablespoon ghee and fry the grated carrots on low flamen,stirring continuously for 3-4 minutes
