Tamarind-a small goose berry size(Soak it in a tbsp of water). Wash the ginger and peel the skin. In a blender add ginger,chillies,jaggery,salt and tamarind along with the water
Knobbly on outside and pale yellow on inside this mango ginger suits prefectly for making pickle. Mango ginger is a seasonal rhizomes and its a plant of ginger family which is closely related to turmeric, this mango ginger looks very similar like ginger but tastewise they will have raw mango taste
little tamarind(optional) ,reduce the spiciness of ginger. In Tamil there is a saying "alavuku minjinal amirthamum nanju" means everything in moderation(even if it is elixir)

One of my favourite pickle if you can call it that is this yummy combination of the mango ginger tender roots with green chillies or green pepper and lime juice
