Ingredients

  • 2 cups long grain rice (i used jasmine rice)
  • 3 large tomatoes, skin removed and pureed (approx 1.5 cups )
  • 2.5 cups water/ vegetable broth
  • 2 tablespoons tomato paste
  • 2 tablespoons oil
  • 1 tablespoon butter
  • Salt to taste
  • Black pepper to taste
  • 3-4 cloves of garlic, minced
  • 1 small jalapeno/ green chili, minced
  • 1 small onion, finely chopped
  • Juice of 1 lime
  • handful of fresh coriander, finely chopped
