Ingredients

  • 10-12 mini frittatas
  • 8 eggs 2 cups kale leaves, chopped
  • 1 potato, peeled & chopped
  • 1 tomato, chopped
  • 1 onion, thinly sliced
  • 1/2 cup shredded cheese (I used mozzarella)
  • 1 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • 1/2 tsp lemon juice
  • salt & pepper
  • butter - to grease the muffin cups
