  • ½ onion, finely chopped
  • ½ tsp chopped garlic ½ tsp chopped ginger ¼ carrot, grated ¼ cup cabbage, shredded ¼ cup beans, chopped 5 mushrooms, thinly sliced 3 tsp corn starch dissolved in ¼ cup of water (for a slight thicker consistency in the soup, dissolve 6 to 7 tsp corn starch in ½ cup water) ¾ tsp black pepper 1 tbsp soy sauce or add as required 1 tbsp vinegar or add as required 2 cups water or veg stock, add as required 2 to 3 tsp spring onion green, chopped 1 tbsp oil salt as required Instructions heat 1 tbsp oil in a pan or wok/kadai. add finely chopped onion and fry on medium flame for 2 minutes next add ginger and garlic. stir and saute till raw smell dissapears. then add the finely chopped french beans, grated carrot and shredded cabbage. stir well. now add the sliced mushrooms. stir fry till the mushrooms get lightly browned from the edges. (takes about 5 to 6 minutes on a medium to high flame) once the mushrooms are lightly browned add water or veg stock. stir well. boil veggies for 5 minutes add soy sauce and stir. then season with salt. keep a check on the amount of salt as soy sauce already has a lot of salt. stir the corn starch paste and add it to the soup. stir again very well. bring the soup to a simmer on medium flame for 2 minutes when the soup has thickened, add vinegar also add black pepper. give a final stir. switch off the flame. serve the veg hot and sour soup steaming hot garnished with spring onion. 3.5.3208
