IvyGourdStirFry is a simple, delicious and easy Indian curry. IvyGourd is called Kundroo in Hindi, Tondli in Marathi, Tindora in Gujarati, Thondekayi in Kannada, Dondakaya in Telugu, Kovaykka in Malayalam and Kovaikkai in Tamil
These little green gems compliment the spices that are used in cooking it and I am sharing with you a simple ivygourdstirfry which is tasty and takes just few minutes of your time
Wash the ivygourd/Tindoraand nip the tip and tail end. Heat a pan with oil, when it is hot add mustard seeds, allow it to sizzle, then add chopped onion and curry leaves, fry until onion turns to translucent
Wash the dried prawns in warm water and keep aside. Temper , Mustard Seeds and Cumin Seeds. Then add Chopped Onions and Garlic, cook it till they turn brown
IvyGourd/Tindora/Kovakka/Dondakayaand Potato is tempered with Indian spices andstir fried in a wide pan or wok patiently over low flame till they shrink in size and become mildly crisp
The IvyGourd ,though small has a long list of cute ,funny and interesting names. gentleman’s toes, little gourd,little cucumber,Thai spinach,Scarlet Gourd,Tindora ,Kundru,Kovakka,Kovai,Dondakaya,Tondli etc etc and botanical names like Coccinia indica, Coccinia cordifolia, or Coccinia grandis
Peel and cut the ridge gourd into small cubes. Heerekai in Kannada, and Gossale in Konkani) cooked with tomato and onion, which is quick to make and goes well with phulkas or rotis

Fry the cumin seeds till they start to splutter. Tindora Fry is ready. 11/2 Teaspoon Dhaniya Coriander Powder. 11 Tablespoon OilWash, rinse and drain the Tindoras. 1Chop off the ends and cut them into thin slices lengthwise. 1Heat oil in a pan and add 1 teaspoon Cumin Seeds. Add 3-4 Dried Red Chillies, 5-6 Curry Leaves, 1-2 finely chopped Green Chillies & a pinch of Heeng andfry. 1Add Haldi, Red Chilli Powder, Garam Masala, Coriander Powder, Salt and Lemon Juice. 1Stirfry the vegetables on a high-medium flame for 3-4 minutes. Then cover with a lid and cook on low flame, stirring occasionally for 15-20 minutes till cooked
