When i browsed for mixed vegetablesaladrecipes,i found most of them with celery & lettuce leaves. I too had the habit of eating salads only in buffet & banquets and i was making varieties of vegetable & sprouts saladrecipes for Sendhil’s lunch only to cut down the intake of rice when he was under diet to overcome some health issues

I have made use of eggless mayonnaise for this recipe. Usually I make South Indian breakfast items like idli / dosa and today also I made ada dosa / lentil crepes, but my daughter wanted sandwiches, so made this quick and healthy sandwich for her along with a glass of orange juice

It is so simple and fast recipe. Onion - 1/2 cup (chopped finely). Corainder leaves / Cilantro - 1 tablespoon. Turmeric powder - 1/4 teaspoon. Red chilli powder - 1/2 teaspoon. Mixed vegetables - 2 cups ( I have used beans, carrot, Cauliflower). Grind it to smooth paste with 1/4 cup of water. Add beans, carrot and 1/4 cup of water and salt. 1/2 teaspoon Cumin seeds. 1 teaspoon Mixed vegetables
