6-8 medium
potatoes, boiled
1 cup paneer, crumbled
½ - 1 cup milk powder or mawa powder
½ - 1 cup All Purpose Flour or Maida
¼ tsp minced green chili or cayenne pepper
¼ tsp cardamom powder
¼ tsp fenugreek, ground
Salt to taste
For the sauce
1 medium onion
½ cup cashews/ almonds or mix
¼ cup melon seeds (optional)
2 inch ginger, chopped
5-6 cloves garlic, chopped
½ tsp Garam Masala
¼ tsp turmeric, ground (optional)
Pinch of cayenne pepper
¼ tsp cardamom, ground
¼ tsp fenugreek, ground or
¼ tsp Kasoori Methi
½ tsp sugar
Salt to taste
2-3 Tbsp heavy cream
2 Tbsp oil + more for deep frying
Cilantro or crumbled paneer for garnish
Method
For paneer/cottage cheese – Alternately you may use store-bought paneer, crumbled – ½ cup. This is my first attempt with creating restaurant-style recipes at home and I am loving it
i learnt this recipe from my chef friend – vivek. malaikofta is a traditional punjabi gravy recipe which is prepared in most of the punjabi and north indian houses
Ingredients For Koftas. Add whole garam masala (cinnamon stick, cloves, cardamom), when it crackles add chopped Onions, ginger-garlic paste, turmeric powder, red chilli powder, coriander powder, curry powder and saute for minutes
Malai means fresh Cream. In this dish the koftas are made from Aloo/Potato and Stuffed with Paneer/cottage cheese preferably home made, and then simmered increamy tomato gravy
Let it be matar paneer, achari paneer, paneer corn burji, malai palak paneer, paneer tikka masala, kadai paneer or the most royal one -Paneer butter masala
