Ingredients

  • 1 cup frozen sweet corn
  • 1 cup frozen peas
  • 1 cup frozen blackeye peas
  • 1 red pepper, diced
  • 1 tbsp olive oil
  • 2 tsp cumin
  • 1 lime, juiced
  • 2 tsp hot sauce
  • 1/4 cup cilantro
  • salt and pepper
  • sliced avocado for garnish
  • Let sit in the fridge for an hour or two (or overnight). Top with sliced avocado before serving.
