Mughlai VegetableKurma. (deep fry all the vegetables separately till almost done). (If you don't want to deep fry the vegetables then just smear some oil on the vegetables & bake them till it shrinks )

My mom made this mixedvegetablekorma (kuruma/ kurma) It was thicker than normal korma. Add mixedvegetables, salt and water let it boil and vegetable half cooked
