Ingredients

  • 2 cups of your favorite veggies, parboiled – I have used baby carrots, green beans, peppers, cauliflower, potatoes, mushrooms
  • 1/4 cup chopped fruit – pineapple is commonly used, but I have used apricots- you can also use raisins
  • paneer – cubed
  • your favorite nuts – I have used almonds
  • 2 +2 tbsp ghee/oil
  • 1 large onion chopped
  • handful of almonds/cashews, plus a small bit for the curry (fried, not raw)
  • 2 cups chopped tomatoes
  • 1 can coconut milk
  • 1 tbsp ginger garlic paste
  • 1 green chili chopped
  • 1/2 tsp turmeric
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • pinch of saffron
  • 1 tbsp deggi mirch/kashmiri chili powder
  • 1 tsp garam masala
  • cilantro for garnish
