oats upma recipe | healthy masala oats upma recipe Author: Hebbar's Kitchen Recipe type: breakfast Cuisine: south indian Serves: 2 Servings Ingredients for roasting oats: 1 cup quick cooking oats / rolled oats ½ tsp oil ½ tsp turmeric powder other ingredients: ½ onion, chopped ½ carrots, chopped 6 french beans, chopped 7 to 8 curry leaves/kadi patta 1 or 2 green chilies, chopped ¼ cup green peas / matar, fresh or frozen 1 tsp mustard seeds / rai 1 tsp cumin seeds / jeera (optional) 1 tsp urad dal 2 dried red chillies 8 to 10 cashews / kaju or peanuts 1 inch ginger / adrak, chopped (optional) 2 tbsp chopped coriander leaves/dhania patta 1.25 cups water 1 to 1.5 tbsp ghee or oil 1 tsp sugar ½ turmeric powder 1 tbsp lemon juice salt as required Instructions roasting oats: heat ½ tsp oil in a pan and add 1 cup quick cooking oats along with a pinch of turmeric powder. stir and saute on a low flame till the oats become crisp. keep stirring continuously so that the oats do not get browned from the bottom. no need to brown the oats. remove oats in a plate or tray and keep aside. preparing upma: in a pan, heat 1 tbsp oil. add 1 tsp mustard seeds,1 tsp urad dal and 2 dried red chilli. stir and saute till the mustard seeds crackle. now add few cashews / groundnut and curry leaves. fry till cashews turn golden brown. add finely chopped onions. stir and saute till the onions turn translucent. then add chillies, chopped carrots, chopped french beans. stir and saute for 2 minutes also add green peas and cook for a minute or two. then add the roasted oats. stir lightly. add salt, sugar as required. also add turmeric powder and stir very well. then add 1.25 cups water. cover the pan with its lid. on a low flame, steam the oats upma for 7 to 8 minutes once done, then add 1 to 2 tbsp chopped coriander leaves and drizzle with some lemon or lime juice. 3.5.3208
