I have seen mom using citron in a pachadi which we call as narthangai pachadi. Heat oil in a pan, add inbittergourd, salt and turmeric and saute till it is done and cooked down
The mainingredientbeing freshly grated coconut ground to smooth paste along with ginger, green chillies, and mustard seeds and yogurt and is mixed with variety of raw or cooked vegetables

In a cooking vessel take tamarind juice, bittergourd, salt,sambar powder and boil it. Ingredients. After bittergourd cooked add channa and keep in low flame for a minute or two
For reducing the bitterness, bittergourd is sauteed in tomato gravy until mushy and then pickled. And i used tamarindinstead of vinegar, so this pickle must be refrigerated and used within a week
