  • 30 mins potato curry for masala dosa | aloo baji for masala dosa Author: Hebbar's Kitchen Recipe type: curry Cuisine: indian Serves: 4 servings Ingredients 4 large potato 1 onion 1 green chilli 2 tbsp lemon juice 1 inch ginger 2 tbsp oil 1 dried red chilli 1 tbsp cumin seeds 1 tbsp mustard seeds / rai 1 tbsp urad dal 1 tbsp channa dal 1 stem coriander leaves / hara dhaniya .5 tbsp turmeric powder pinch hing / asafoetida salt to taste 1 stem curry leaves Instructions boil the potato and peel the skin off, cut into medium pieces. keep aside. finely chop green chillies, ginger, coriander leaves. also thinly slice onion and keep ready. in pan heat a tablespoon of oil and add cumin seeds, mustard seeds, urad dal, red chilli and channa dal. cook for about half min or till mustard seeds splutter. then add curry leaves and hing. fry for a minute. now add thinly sliced onion and fry till then turn translucent. add chilli and ginger. fry till the raw smell of ginger goes away. now add boiled and chopped potato and give a quick stir. add turmeric powder, water and salt to taste. mash the potatoes if they are too chunky. cook for about 4 min and then mesh some potato so that you get nice gravy paste. once the sabji is cooked squeeze some lemon juice and garnish it with fresh chopped coriander leaves. serve aloo bhaji hot with dosa's. 3.5.3208
