chopped mint / pudina ½ cup chopped coriander leaves / dhania patta 1 to 2 green chillies / hari mirch ½ inch ginger / adrak 2 - 3 garlic / lahsun ¼ onion 1 tbsp grated coconut or 2 tbsp coconut milk (you can also add 2 tbsp desiccated coconut, if you don't have fresh coconut) pulao ingredients 1 cup basmati rice / sona masuri rice ½ tsp cumin seeds 4 cloves / lavang 1 inch piece of cinnamon / dal chini 6 black peppers 1 small to medium tej patta / indian bay leaf ½ medium onion 1 small tomato 1 small potato ½ carrot 5-6 beans 1 cup cauli flower ¼ cup fresh or frozen peas 1.5 to 2 cups water salt to taste Instructions rinse the 1 cup basmati rice till the water runs clear of the starch. soak the rice in water for 15-20 minutes, later drain the rice and keep aside. meanwhile, when the rice is soaking, prepare the other ingredients. keep the grinding ingredients ready ie. 1 cup chopped mint leaves, ½ cup chopped coriander leaves, 1 inch ginger, 3 garlic, 1 or 2 green chilies, 1 tbsp chopped coconut or 2 tbsp coconut milk or grated coconut. grind the above ingredients in a small mixer. add 2 to 3 tbsp water and grind to a smooth paste. add more water if required while grinding. heat 2 tbsp oil in the pressure cooker. add the following whole spices - cumin seeds, cinnamon stick, tej patta, cloves, mace and black peppers. fry the spices for some seconds till they become aromatic. then add thinly sliced onions and sauté for a minute. add chopped minute and saute it well. now add all chopped veggies like potatoes, cauliflower, carrot, peas and beans. after sauting the veggies for 3 minutes add masala paste and stir well. add the drained rice and stir gently. the oil should coat the rice grains well. stir & saute for a minute. add 1.5 to 2 cups of water. stir well. add salt. stir again. cover the lid tightly and pressure cook for 2 whistles till the rice grains are cooked. when the pressure settles down on its own, open the lid and gently fluff the rice. serve pudina pulav hot with plain curd/yogurt or with onion-tomato raita. 3.5.3208

you can also add any of these veggies like Carrots(finely chopped)/bottle gourd(grated)/ beetroot(grated)/Radish(grated)/ spinach/Methi leaves/ dill leaves/mint leaves/drumstick leaves to the dough for extra Nutrition
