Step by step method/picture to make PuliInji for Sadya. (Its according to the sweetness you want). Heat oil in a pan in low medium flame roast the ginger & green chillies till brown (do not burn them)
The various tongue tickling characters of this unique pickle like the sweetness of the jaggery, the hot spicy chillis, the tartness from the ginger all blend well to give a unique flavor to the taste buds and is an excellent accompaniment to dishes like idlis, dosas and curd rice
InjiPuli, also known as PuliInji is a Kerala special pickle. It is normally prepared with ginger, green / red chillies, tamarind, jaggery and coconut oil
So, here comes the process of making my easiest description of Sweet and Sour Mango Pickle. My mom used to prepare different types of pickle with the green /raw mangoes and stored up them for all of us , for the rest of the year
But,I have only added ginger powder for flavour and taste. Totally loved the sweet,sour and spicy taste of this pickle While making pickles use crystal salt rather than powdered one
Knobbly on outside and pale yellow on inside this mango ginger suits prefectly for making pickle. Mango ginger is a seasonal rhizomes and its a plant of ginger family which is closely related to turmeric, this mango ginger looks very similar like ginger but tastewise they will have raw mango taste

Here is the traditional PuliInji- a hot and sour sauce made of ginger,green chillies and tamarind. It can be served as a healthy substitute to pickles too
Today I made one of my favorite mango pickle, a sweet and sourpickle, 'tok-misti aamer achar' as we say in Bengali (tok=sour, misti=sweet, achar=pickle)
Next in my view was +Anjana Chaturvedi 's Post Sweet and Sour Lemon Pickle (oil free) I seriously wanted to make this, kept telling my mom all the time, but still kept off coz Dint had space to keep pickle jar in sun light, next dint had glass jars etc etc
