Ingredients

  • 1 kg Mutton preferably shoulder cut.
  • 5 onions chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 2 tablespoons tomato paste or puree
  • 2 large potatoes diced in quarters
  • 5-6 green cardamoms
  • 5-6 cloves
  • 3 strands of javitri/mace
  • 2 bay leaves
  • 2 green red chilies
  • 1 tablespoon vinegar
  • 1 tsp turmeric powder
  • 2 tsp Kashmiri red chili powder
  • 2-3 cups of water
  • 1 inch ginger
  • 8 fat cloves of garlic
  • 5-6 whole dry red chilies
  • 8 black peppercorns
  • 2 tsp cumin seeds
  • 2 tsp coriander seeds
  • 2 tsp saunf or fennel seeds
  • 2 tsp kashmiri red chili powder
  • 1 tsp sugar
  • 1 tsp mustard oil
