Raw plantain pancake with carrot chutney

Ingredients

  • Raw plantain – 1 no
  • Chopped onion & green chili – 1 no each
  • Wheat flour – 1 cup
  • Semolina/rava – 1/4 cup
  • Turmeric powder – ½ tsp
  • Caraway/ajwain seeds, cumin powder – 1 tsp each
  • Oil – as required
  • Salt – as per taste
  •  
  • For the carrot chutney
  • Carrots – 2 nos
  • Onion – 1 small
  • Garlic – 3 cloves
  • Dry red chili – 2 nos
  • Grated coconut – ¼ cup
  • Salt – as per taste
  • Oil – 1 tsp
  • Mustard seeds – ½ tsp
  • Hing / Asafoetida – a pinch

Instructions

    Boil plantain with water until soft. Peel off the skin and grate. Add all ingredients into plantain. Make into batter with water.Pour over hot pan. Flip and cook on both sides.

    For the chutney, sauté onion, garlic, red chili and carrot one by one. Add coconut and salt. Grind.Temper with mustard seeds, curry leaves and asafetida. Serve with the pancake.
