Ingredients

  • 1 cup basmati rice
  • 1½ cup moong dal
  • 13 cups of water
  • 1½ tsp turmeric powder
  • 11 tsp red chilli powder
  • 1 salt to taste
  • 1¼ tsp asafoetida / hing
  • 11 tbsp ghee / clarified butter
  • 11 bay leaf
  • 12 whole kashmiri red chillies
  • 12 cloves (lavang)
  • 11 inch piece cinnamon stick (dalchini / taj)
  • 11 tsp cumin seeds (jeera)
  • 1¼ tsp asafoetida (hing)
  • 112-15 curry leaves (curry patta, limbdo)
  • 11 tbsp ginger, finely chopped
  • 11 tbsp garlic, finely chopped
  • 11 small onion, finely chopped
  • 12 tomatoes, finely chopped
  • 1¼ tsp turmeric powder
  • 1½ tsp red chilli powder
  • 1¼ cup water
  • 18-10 mint leaves, chopped (phudina)
  • 12 tbsp coriander leaves, finely chopped
  • 11 tsp ghee
  • 1 few coriander leaves
  • 1 papad
  • 1 chutney
  • 1 achar
  • 1 curdfirstly, soak rice and dal for around 20 minutes.
  • 1 then add soaked rice and dal to the pressure cooker
  • 1 now add turmeric powder, red chilli powder, salt to taste and asafoetida.
  • 1 pressure cook for 4 whistles.
  • 1 heat the ghee in a pan.
  • 1 add bay leaf, whole kashmiri red chillies, cinnamon sticks, cloves, cumin seeds curry leaves & asafoetida.
  • 1 saute for few seconds.
  • 1 now add finely chopped garlic and ginger.
  • 1 then saute till raw smell disappears and it turns light brown.
  • 1 then add finely chopped onions & cook till they translucent.
  • 1 now add tomatoes and cook till they turn soft and mushy
  • 1 then add salt to taste, turmeric powder & red chilli powder
  • 1 now add water & bring to a boil for around 3-4 minutes.
  • 1 now add the prepared khichdi into the pan.
  • 1 mix well and mash khichdi lightly.
  • 1 now sprinkle mint leaves, coriander leaves and mix well.
  • 1 serve with adding a spoonful of ghee and coriander leaves. serve khichdi hot with papad, chutney, achar or curd.
