Shahi Pulao - Aromatic Basmati Rice in Vegetables and Paneer

Ingredients

  • 2 cups basmati rice, rinsed
  • 1 cup paneer, diced
  • 2 cups mixed vegetables (peas, cauliflower, carrot, potatoes)
  • 1.5 cups water
  • 2 cups milk
  • 4-5 cloves 4-5 green cardamoms
  • 2 " cinnamon stick
  • 3-4 bay leaves
  • 3 tbsp oil or ghee
  • salt to taste
  •  
  • Grind to a smooth paste
  • 1 medium onion
  • 1 medium tomato
  • 7-8 cloves of garlic
  • 2 " ginger
  • 3 green chilies
  • 2-3 tbsp chopped cilantro
  •  
  • For the garnish
  • 2 tbsp oil or ghee, divided
  • 1 large onion, sliced
  • 3 tbsp slivered almonds
  • 3 tbsp raisons
  • 3 tbsp chopped cashews
  • 3 tbsp chopped walnuts
  • 1 tbsp chopped cilantro
