Ingredients

  • 1/4 kg peeled madras onions
  • 1/2 cup tamarind, dissolved in 1 cup warm water, pureed and strained
  • 1/2 cup palm sugar
  • 1.5 tablespoon red chill powder
  • 75 grams olive oil (you can use mustard oil or sesame oil too)
  • 1 teaspoon mustard seeds
  • Salt to taste
  • 10-12 curry leaves
  • Powder of khada masala: 1/2 teaspoon each fenugreek, cumin seeds and fennel seeds
  • 1/2 teaspoon asafoetida
