also goes very well with dal and rice. Simple Tendli/Tindora/IvyGourd, The Kooky Mum's WayServings. Interestingly, cooking with tendli is not confined to the Indian subcontinent
This is a simple Indian curry made with tendli / Ivygourd. When onions turn golden brown add sliced potato, ivygourd, garam masala, red chilly powder, amchur
I am frying this in rice-cooker but this can be cooked on stove top in a nonstick-pan too. Ivygourd is also known as tindora, tondekaayi, tendli, tondli, kundru etc in various Indian languages
IvyGourd/Tindora/Kovakka/Dondakaya and Potato is tempered with Indian spices and stir fried in a wide pan or wok patiently over low flame till they shrink in size and become mildly crisp
When water starts to boil add salt and rice mix them well and close the lid along with weight. Serve hot the tasty and healthy kovakkai varagarisi rice
Add the cooked rice and salt to taste and mix. Heat 1 1/2 tbsp oil+1/2 tbsp ghee in a cooking vessel, add the halved dondakayalu/tindora and saute on medium flame till well roasted, approx 15 mts

Serve ivygourd stir fry with rice or serve it as a snack item. I prefer only stir fry but a stuffed with grated coconut or cooked with some light masala is also a good side dish for rice
