Vada (Mumbai Roadside Vada Pav Recipe)

  • Serves 4 to 5 ppl.
  • Aloo Masala
  • Boiled potatoes- 4
  • Ginger Garlic paste- 1/2tsp
  • Green chillies- 1/4tsp
  • turmeric powder- 1/4tsp
  • salt as per taste
  • coriander
  • lime juice-1/4tsp
  • Tempering for aloo masala
  • Oil- 1/2tsp
  • Mustard seeds- 1/2tsp
  • curry leaves- 6/7 leaves.
  • Batter
  • Besan- 1/2 cup
  • salt as per taste
  • soda- pinch
  • turmeric- pinch
  • red chilli powder- pinch
  • Hing (asafoetida)- pinch
  • Water (pouring consistency).
  • Oil for deep frying.


    Mix together all ingredients of Aloo masala.
    Give it a tempering.
    Mix things together and make balls of medium size and keep aside.
    In a pan take oil for deep frying, keep it for heating.
    Meanwhile take a bowl add besan, salt, turmeric, hing, red chilli powder, soda, water and mix well till it becomes pouring consistency batter (NOT TOO WATERY). Add 1tsp of hot oil in this batter.
    Now dip balls from this batter and deep fry till golden.
    Serve hot with Green or red chutney.
